This IS your grandmother's caesar salad. It is the classic table side caesar from all the fancy midtown steakhouses in Mad Men. It is tried and true and, once you learn it, it is a great place to start experimenting. Typically it is made with romaine lettuce but these photographs are with baby kale because it's quar! I will soon share MY go to caesar which is a little different but both amazing.
Ingredients For Dressing:
1 clove of garlic
1 egg
2 tbsp olive oil
1/2 tbs dijon mustard
1 can of anchovies, minced
2 tsp lemon juice
4-6 dashes of tabasco
1 dash Worcestershire sauce
3 tbsp capers
1 head of romaine lettuce
Ingredients For Croutons
1/2 crusty baguette or sourdough
1/2 tbsp olive oil
Garlic powder

Method:
In a large wooden salad bowl, rub the cut side of garlic over your bowl to impart a garlic essence.
Add the egg, olive oil, and oil from your anchovy can, beat lightly, being careful not to over-beat.
Add mustard, lemon, tabasco, Worcestershire, combine without beating heavily.
Carefully mix in minced anchovies and capers.
Prepare your croutons: using your hands, tear the bread into small pieces.
In a small bowl, mix together the bread pieces with olive oil, garlic powder, salt, and pepper.
Arrange the croutons on a baking tray and bake at 400 for 8 minutes, until the edges become golden brown.
Add lettuce, cut into 1 inch strips, to wooden bowl with dressing, toss lightly. Top with croutons.
