This is truly a recipe made for dumb bitches. It is barely even a recipe actually - just two ingredients make this incredible sauce that completely changes a meal. Steak with shallot butter is my go-to "easy and impressive" dish. It really comes in handy on vacation or cooking in a kitchen that isn't your own. As long as you have butter and shallots (and something to serve it on) everyone will be fawning all over you and your cooking talents, even though you hardly even did anything!
Obviously the steak element is completely optional. Shallot butter goes great on grilled vegetables and squash, potatoes, and even other meats like a pork chop or a hearty fish like halibut or swordfish.
The steaks I used here - 2 inch bone in ribeyes - are, admittedly, ridiculous. They called out to me from the butcher counter and who am I to refuse them! Again, use shallot butter on any and all of your steaks from these sexy honkers to a lil skirt steak and everything in between.
Ingredients:
1/2 stick salted butter, enough for 4 people. You will need about 1 tbsp per person
3 medium shallots
OPTIONAL: olive oil
My mom is a firm believer in cooking things in "half and half", meaning half butter, half olive oil. She applies this pretty universally to any sautéed vegetables, including these shallots. Using only butter is a bit more decadent but feel free to add some oil if that is more your speed.
Method:
Finely chop shallots, no need to mince
In a small sauce pan over medium low heat, combine butter and shallots
Stirring occasionally, simmer for 20-30 minutes, until shallots are soft and translucent
Serve poured over sliced steak
