Am I addicted to caviar? Yes I am get over it! This is a super simple and easy omelette base that can be amended for any filling but the salmon caviar is really a special touch to this brunch dish or even serve it as an appetizer.
Ingredients:
salmon caviar - about .5 oz per person
1 large or 2 smaller eggs
1 heaping tbsp of plain greek yogurt
1 tsp of lemon juice
1 small pat of butter
Method:
In a small bowl, beat egg vigorously with a fork.
In a small pan over medium low heat, melt butter. When butter starts to sputter, pour beaten egg into pan and gently rotate the pan until the egg liquid covers the bottom of the pan.
Let the flat egg cook for 2-3 minutes, until the sides begin to curl, then use a broad spatula to flip the circle.
Cook for 3-4 more minutes until golden and then remove.
In a small bowl, whisk the yogurt and the lemon juice together.
Spread the yogurt mixture onto one side of the egg and then place the salmon caviar in a line down the center of the circle. Fold both sides over to make a wrap shape and enjoy!
